Novios roasts small batches on site, about six pounds at a time, several days a week. Its owners only sell bags of beans within seven days of roasting, so what you take home is fresh. You can drink it there too: Novios is a full café with a fireplace and a drive-thru.

Colorway Coffee Roasters
Colorway is a roastery with no café of its own. It roasts at 322 Elton Hills Dr NW and roasts for more than 30 cafés and businesses. Its owner also owns Café Steam, which has carried Colorway coffee since 2021. You can buy bags online, with free delivery anywhere in Rochester.

Minnesota roaster, Rochester café
Spyhouse Coffee Roasters
Spyhouse roasts in Minneapolis and runs a café in Rochester inside the TownePlace Suites, a few blocks from Saint Marys Hospital. It sells its own beans, and also serves beer and wine.
